Low Carb No Bake Chocolate Cheese Cake
For the crust:
1/2 cup shredded coconut, unsweetened
1/2 cup coconut powder
1/2 cup almond flour
2 tbs cocoa powder
2 tbs xylitol
1/4 cup butter melted or coconut oil
Mix all ingredients well, add melted butter, combine well. Press on a cheesecake pan evenly, refrigerator for 15 min.
- 500 g cream cheese
- 200 g sour cream
- 2 cups heavy cream+ 2 tbs xylitol
- 2 envelope gelatin+ 1/2 cup water+ juice of 1 lemon
- 1/2 cup xylitol
- 1 ts vanilla extract
- 2 ts strawberry extract
In a bowl mix cream cheese, sour cream, xylitol, vanilla, 1 tsp strawberry extract.
In a sauce pan over low heat put water, gelatin and lemon juice, stir until liquid.
Whip the heavy cream, 2 tbs xylitol and 1 tsp strawberry extract, set aside
Combine gelatin mixture to cream cheese mixture well
Then slowly mix whipped heavy cream to cream cheese mixture in 3 patches.
Pour on top of crust.
For the top chocolate
- 60 g dark chocolate
- 2 tbs butter
Finally melt chocolate and butter on low heat, let cool little, pour over cream cheese and mix with back of a spoon leaving dark patches and white patches.
